Hakata Ippudo, The True Ramen Experience

I would say this is the hottest ramen restaurant in town and it’s a waste if you don’t give it a try. My BF was saying that this is one of a MUST-TRY ramen ever since we discovered it on February 8 when it was still under renovation. Hakata Ippudo is finally opened in Kuala Lumpur officially on the February 21. Let’s learn more about Hakata Ippudo before looking into what I have ordered.

IPPUDO was founded in 1985 in Japan’s ramen capital of Hakata by Shigemi Kawahara, the internationally renowned Ramen King and CEO of Chikaranomoto Company, which encompasses some of Japan’s finest restaurants. There are over 65 stores in Japan, and globally in places such as New York, Sydney, Hong Kong, Singapore, Taiwan, South Korea and Shanghai. IPPUDO has become the most popular ramen restaurant over the years. Kawahara was crowned Ramen King in 2005 and holds a place in the Ramen Hall of Fame after winning the championship 3 times consecutively between 1995-1998, on “TV Champion Ramen Chef,” a reputable Japanese television show produced by TV Tokyo.

We were served quickly upon seat availability, it was less than 5 minutes waiting time. The interior of the restaurant is keeping the theme of red, black, white with wood furnishings. The environment is cozy and busy. Initially, we were seated at a table of two but requested for a change to sit by the bar. We wanted to see the happenings at the open kitchen and of course, we have something to share! It was very nice of the waiter to only allow us to have our seats by the bar after the cleaned the dishes from the previous customers.

We’ve watched and learn to see how the dishes are being prepared by the open kitchen. This chef were mixing all the ingredients once the ramen has been prepared. Like a typical ramen shop, greetings of orders coming in and welcoming customers never stopped making the environment is a little noisy if you’re not used to it. Your ramed are rest assured to be served warm because if you look at this photo carefully, behind this chef is where they literally cook their bowls. The bowls are not extremely hot, warm enough to ensure your ramen warm when it is served to you.

“IPPUDO’s original tonkatsu broth enhanced with special blended miso paste and fragrant garlic oil. Served with thin noodles, belly chashu, kikurage and spring onions. A refined, modern-style ramen. – Akamaru Shinaji”

Akamaru Tamago is the combination of Akamaru Shinaji with flavoured egg. Upon ordering, we were also asked for the softness of the ramen and I have chose normal. The ramen softness was a little hard at the beginning but slowly soften by thewarm soup. The soup is creamy and with the fragrant garlic oil makes the flavour much more intense. BF didn’t like the heavy garlic oil scent but I’m good with it. There was also 2 pieces of belly chashu of 0.5cm thick and the whole egg was slightly cooked that I have imagined because I was expecting that the yolk should be melting its way out.

“IPPUDO’s original tonkatsu broth with special spicy miso & ground pork. – Karaka-men”

This was ordered by BF with medium ramen softness. Karaka Tamago is the combination of Karaka-men with flavoured egg. This dish is spicy and I would put it at mild to medium spiciness level.  The medium softness ramen is indeed softer than the normal softness. The soup is not as creamy as my dish but I freaking love the ground pork. Once bitten, it melts in my mouth. We have ordered additional ramen (Kaedama, MYR 4.00) for soft ramen but we can’t really tell the difference from this with medium softness.

I would definitely recommend these two dishes and its worth the experience of dining in there. However, we were very thirsty within an hour after having the ramen and thought MSG might have been used but thinking about it, Ajinomoto is after all from Japan. Dining in are subjected to 10% service charge and 5% of government tax. Operates daily from 11:00AM to 11:00PM and food served is non-halal.
